The 'house cake' from French Basque Iparralde filled with pastry cream and/or fruit jam 

Simple, yet elegant hard crust cake (pâte sablée) we baked in three versions: a rich dark-rum powered vanilla cream with almond aromas, a dark cherry jam filling or a combination of the two.
